Maize flour is obtained by extracting the starch from the maize kernel, specifically from the endosperm of the seed. It is almost 100% starch, with no fibre, protein, fat or other components. It is a very fine white powder that looks like chalk. It is often used as a thickening agent to thicken sauces and custards, such as pastry cream.
